Tomato & Roasted Red Pepper Soup with Quesadilla
Today is a soup kind of day. I had some leftover fajita filling from the other night so I whipped up a quesadilla. The perfect cold weather meal for me. 
Trader Joe’s Organic Tomato & Roasted Red Pepper Soup (8 oz.)
Sour Cream (2 tsp)
2 Small Flour Tortillas
Mexican Blend Shredded Cheese (1 oz.)
Leftover Fajita Filling
Avocado (1/4)

Spinach Pie
Just like my mama used to make. Seriously, this recipe comes from my mother. Somewhat like a quiche only more spinach. Yum.
6 large eggs
1 cup 2% milk
1 cup part-skim shredded mozzerella cheese
10 oz. box frozen chopped spinach, defrosted
1 packet Lipton Vegetable soup mix
1 pre-made 9” pie crust (unbaked)
Preheat oven to 350ºF. In a large bowl, beat eggs. Mix in milk, cheese, spinach*, & soup mix. Pour egg mixture into pie crust and bake for 50 minutes. Great for breakfast or lunch. Also an easy addition to a Sunday brunch menu!
(*Spinach should be fully defrosted and have most of the excess water pressed out of it. You can do this easily by pressed it between two paper towels before adding it to the egg mixture.)

Marie’s Parmesan Caesar Yogurt Dressing (1 Tbsp)

Carrot
Celery (1 stalk)
Cook bacon strip in microwave for 2-3 minutes. Cut pita in half to make 2 pockets. Assemble turkey, bacon cheese and lettuce in the pitas. Drizzle yogurt dressing on to the sandwich.
