I recently started trying to eating healthier and love to cook. Part food log, part recipe blog; this is my arsenal of delicious dishes.

I'm always excited to find new recipes so if you have any please send them to me! If it's truly scrumptious, I just might feature it on here.

Breaded Flounder
This dinner was brought to you by Fridays in Lent.
Flounder fillet (you can use any type of fish actually)
1 Tbsp Corn Meal
1 Tbsp Flour
1/4 tsp salt
1/8 pepper
1/8 paprika
1 egg
Mix corn meal, flour, salt, pepper & paprika in a shallow bowl. I also added some italian bread crumbs… Beat egg in a separate bowl. Dip fish in egg. Coat in corn meal mixture. Bake in a glass dish @ 425ºF for 8-10 min (until fish flakes with a fork).
Served here on a bed of spinach with pasta and a salad.

Named “Dip it Eggs” in my family (since I was a little kid) because you dip your toast in the runny yolk. So good.
