Breaded Flounder
This dinner was brought to you by Fridays in Lent.
- Flounder fillet (you can use any type of fish actually)
- 1 Tbsp Corn Meal
- 1 Tbsp Flour
- 1/4 tsp salt
- 1/8 pepper
- 1/8 paprika
- 1 egg
Mix corn meal, flour, salt, pepper & paprika in a shallow bowl. I also added some italian bread crumbs… Beat egg in a separate bowl. Dip fish in egg. Coat in corn meal mixture. Bake in a glass dish @ 425ºF for 8-10 min (until fish flakes with a fork).
Served here on a bed of spinach with pasta and a salad.
